Grilled Lemon Oregano Chicken

Simple ingredients are the hallmark of Mediterranean cooking. Lemon, garlic, oregano and good olive oil are all you need for juicy grilled chicken.

Ingredients
- 4 boneless skinless chicken breasts
- ¼ cup extra virgin olive oil
- Juice of 2 lemons
- Zest of 1 lemon
- 3 garlic cloves, minced
- 1 tablespoon fresh oregano, chopped
- 1 teaspoon Dijon mustard
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Method
- Whisk together the olive oil, lemon juice, zest, garlic, oregano, Dijon, salt and pepper.
- Marinate the chicken at least 30 minutes.
- Grill over medium-high heat 5–6 minutes per side, until it reaches 165°F.
- Rest 5 minutes before slicing.
No grill? Sear in a hot grill pan or cast-iron, or broil close to the heat, until cooked through.

Master this one marinade and you'll grill all summer without a recipe. Lemon, garlic, oregano, good oil — that's the whole secret.
