Think of this as tzatziki without the cucumber — cool, garlicky, herb-flecked, and good on nearly everything that comes off the grill.

Ingredients

  • 1 cup plain Greek yogurt
  • 1 small garlic clove, finely grated
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons chopped fresh herbs (dill, mint, parsley)
  • ½ teaspoon sea salt

Method

  1. Stir together the yogurt, garlic, lemon juice, olive oil, herbs and salt.
  2. Let it sit 10 minutes so the garlic mellows and the flavors come together.
  3. Taste and adjust with more lemon or salt.

Storage: Keeps 4 to 5 days refrigerated. Stir before serving.
