Baked Salmon with Tomatoes, Basil & Feta

This is summer on a plate. Sweet tomatoes, creamy feta, fresh basil and salmon come together in one baking dish for an effortless Mediterranean dinner.

Ingredients
- 4 salmon fillets
- 2 tablespoons olive oil
- 2 cups cherry tomatoes
- ½ small red onion, thinly sliced
- ½ cup crumbled feta cheese
- ¼ cup chopped fresh basil
- 2 garlic cloves, minced
- Juice of ½ lemon
- Salt and pepper
Method
- Heat the oven to 400°F.
- Place the tomatoes and onions in a baking dish and toss with olive oil, garlic, salt and pepper.
- Roast for 10 minutes.
- Nestle the salmon into the vegetables and bake another 12–15 minutes.
- Sprinkle with feta and basil and finish with fresh lemon juice.
Gina's tip
Serve with crusty whole-grain bread to soak up the juices.
