Garlic Shrimp with White Beans & Spinach

This one-pan meal comes together in under 30 minutes. Creamy cannellini beans, sweet shrimp, garlic and spinach make it hearty without feeling heavy.

Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 (15-ounce) can cannellini beans, rinsed and drained
- 4 cups baby spinach
- 1 cup cherry tomatoes, halved
- ½ teaspoon crushed red pepper flakes (optional)
- Juice of 1 lemon
- 2 tablespoons chopped parsley
- Salt and pepper
Method
- Heat the olive oil in a large skillet and cook the garlic 30 seconds.
- Add the shrimp and cook 2 minutes per side, then remove to a plate.
- Add the beans, tomatoes and red pepper flakes and cook 3–4 minutes.
- Stir in the spinach until wilted.
- Return the shrimp, and finish with lemon juice and parsley.
Gina's tip
Serve with grilled sourdough or over cooked farro.
