This one-pan meal comes together in under 30 minutes. Creamy cannellini beans, sweet shrimp, garlic and spinach make it hearty without feeling heavy.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 4 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • ½ teaspoon crushed red pepper flakes (optional)
  • Juice of 1 lemon
  • 2 tablespoons chopped parsley
  • Salt and pepper

Method

  1. Heat the olive oil in a large skillet and cook the garlic 30 seconds.
  2. Add the shrimp and cook 2 minutes per side, then remove to a plate.
  3. Add the beans, tomatoes and red pepper flakes and cook 3–4 minutes.
  4. Stir in the spinach until wilted.
  5. Return the shrimp, and finish with lemon juice and parsley.

Gina's tip

Serve with grilled sourdough or over cooked farro.

Coach's Note

One pan, under thirty minutes, and hearty without being heavy. This is a genuine weeknight hero.
