Perfect Farro

Farro is one of my favorite grains. It has a slightly nutty flavor and a wonderful chewy texture that makes any bowl more satisfying.

Ingredients
- 1 cup pearled farro
- 3 cups low-sodium vegetable broth
- 1 bay leaf
- Pinch of sea salt
Method
- Rinse the farro well.
- Bring broth, bay leaf, and salt to a boil.
- Stir in farro.
- Reduce heat, cover, and simmer for 25–30 minutes until tender.
- Drain any excess liquid and remove the bay leaf.
Storage: Keeps for 5 days in the refrigerator.
Gina's tip
Use broth instead of water for extra flavor.
Coach's Note
Cook the grain once, eat it three ways. A pot of farro on Sunday is the foundation half your lunches are built on.
