Ingredients

  • 2 Honeycrisp apples, cut into small cubes
  • 2 ripe Bartlett pears, cut into small cubes
  • 1 cup red grapes, halved
  • 1 cup green grapes, halved
  • ½ cup toasted walnuts, chopped
  • ⅓ cup dried cherries or dried cranberries
  • ¼ cup fresh parsley, finely chopped
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon honey
  • Pinch of sea salt

Method

  1. Cut the apples and pears into small, even cubes. In a large bowl, combine them with the grapes, walnuts, dried cherries, parsley, and lemon zest.
  2. Whisk together the lemon juice, olive oil, honey, and sea salt.
  3. Pour over the fruit and gently toss.
  4. Refrigerate for 20–30 minutes before serving.
