Warm baked bananas with cinnamon, fresh ginger and a touch of nutmeg. Simple, naturally sweet and especially good when you want a little something warm.

Scaled from the original recipe, sizing up or down is proportional, so taste and adjust the salt, acid & spice.

Ingredients

  • 4 firm bananas
  • 1 teaspoon coconut oil, melted
  • 1-inch piece fresh ginger, grated
  • 1 tablespoon cinnamon
  • ½ teaspoon nutmeg
  • ½ cup raisins
  • Optional: cacao powder

Method

  1. Preheat oven to 375°F.
  2. Peel the bananas and cut them in half lengthwise.
  3. Lightly coat a baking dish with the coconut oil and arrange the bananas cut-side up.
  4. Sprinkle with cinnamon, ginger, nutmeg and raisins.
  5. Cover and bake for 10–15 minutes, until the bananas are warm and tender but still hold their shape.
Gina's Tip

Love chocolate? Add a light dusting of cacao powder before serving.
