Baked Cinnamon Bananas

Warm baked bananas with cinnamon, fresh ginger and a touch of nutmeg. Simple, naturally sweet and especially good when you want a little something warm.

Scaled from the original recipe, sizing up or down is proportional, so taste and adjust the salt, acid & spice.
Ingredients
- 4 firm bananas
- 1 teaspoon coconut oil, melted
- 1-inch piece fresh ginger, grated
- 1 tablespoon cinnamon
- ½ teaspoon nutmeg
- ½ cup raisins
- Optional: cacao powder
Method
- Preheat oven to 375°F.
- Peel the bananas and cut them in half lengthwise.
- Lightly coat a baking dish with the coconut oil and arrange the bananas cut-side up.
- Sprinkle with cinnamon, ginger, nutmeg and raisins.
- Cover and bake for 10–15 minutes, until the bananas are warm and tender but still hold their shape.
Gina's Tip
Love chocolate? Add a light dusting of cacao powder before serving.
