Easy Homemade Granola

I really love this recipe. It's quick, easy and healthy — and it tastes great. As much as the adults will be scooping it up, the kids love it too. Make a batch on Sunday and breakfast takes care of itself.

Ingredients

  • 2 cups rolled oats
  • ½ cup slivered almonds
  • ½ cup dried shredded coconut
  • ¼ cup coconut oil
  • ¼ cup maple syrup

Method

  1. Preheat the oven to 350°F.
  2. Combine all the ingredients in a large bowl and spread in a thin layer on a cookie sheet.
  3. Bake 5 minutes, then stir with a spatula. Bake another 5 minutes and stir again.
  4. Keep baking about 15 minutes total, until golden brown all over.
  5. Eat immediately, or cool about 10 minutes before serving.

Gina's tip

Double the batch and keep it in an airtight container or a glass mason jar in the pantry. Stir in goji berries, raisins or dried blueberries, and enjoy it with almond milk or coconut yogurt all week.
