Easy Homemade Granola

I really love this recipe. It's quick, easy and healthy — and it tastes great. As much as the adults will be scooping it up, the kids love it too. Make a batch on Sunday and breakfast takes care of itself.

Ingredients
- 2 cups rolled oats
- ½ cup slivered almonds
- ½ cup dried shredded coconut
- ¼ cup coconut oil
- ¼ cup maple syrup
Method
- Preheat the oven to 350°F.
- Combine all the ingredients in a large bowl and spread in a thin layer on a cookie sheet.
- Bake 5 minutes, then stir with a spatula. Bake another 5 minutes and stir again.
- Keep baking about 15 minutes total, until golden brown all over.
- Eat immediately, or cool about 10 minutes before serving.
Gina's tip
Double the batch and keep it in an airtight container or a glass mason jar in the pantry. Stir in goji berries, raisins or dried blueberries, and enjoy it with almond milk or coconut yogurt all week.
