Watermelon Mint Juice
From The Kitchen
Barely a recipe and impossibly refreshing — cool watermelon, fresh mint, a squeeze of lime. Summer in a glass.
Ingredients
- 4 cups cubed watermelon
- A small handful of fresh mint
- Juice of ½ lime
Method
- Blend the watermelon and mint until smooth — no juicer needed.
- Stir in the lime juice.
- Strain if you like it thin, or leave it as is. Serve very cold over ice.
Storage: Best the day it's made. Give it a stir before pouring, as it separates.
Serve it with
- On a hot afternoon
- At a summer lunch or gathering
- After time in the sun
Stretch it with water
A splash of filtered water — or more — makes the juice go further and lightens the sugar in every glass. It's a gentle option if you're sensitive to sugar or simply looking to cut back. Start with about one part water to three parts juice, then adjust to your taste.
Gina's tip
Watermelon is so juicy you can just blend it — skip the juicer entirely. Freeze the cubes first for an instant slushie.
On a hot day, this is hydration that feels like a treat. Sometimes taking care of yourself is as simple as a cold glass of something real.
I hope this recipe finds a place in your kitchen as it has in mine. Enjoy!
