Lemon Herb Shrimp Marinade

Shrimp cooks quickly and doesn't need a long marinade, just enough to catch the lemon and herbs.

Scaled from the original recipe, sizing up or down is proportional, so taste and adjust the salt, acid & spice.
Ingredients
- ¼ cup extra virgin olive oil
- Juice of 1 lemon
- 2 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon Dijon mustard
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- Pinch of red pepper flakes (optional)
Method
- Whisk together all the ingredients.
- Add the shrimp and marinate 15–30 minutes only.
- Grill or sauté 2–3 minutes per side, until pink and opaque.
Gina's tip
Too much time in the lemon juice can make shrimp tough, short and sweet is the rule.
Coach's Note
The rule with shrimp is short and sweet, fifteen minutes, no more, or the lemon starts to cook it before the pan does.
