Lemon Herb Shrimp Marinade

Lemon herb shrimp marinade

From The Kitchen

Shrimp cooks quickly and doesn't need a long marinade — just enough to catch the lemon and herbs.

MakesEnough for 1½ lb shrimp
Scale

Ingredients

  • ¼ cup extra virgin olive oil
  • Juice of 1 lemon
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon Dijon mustard
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • Pinch of red pepper flakes (optional)

Method

  1. Whisk together all the ingredients.
  2. Add the shrimp and marinate 15–30 minutes only.
  3. Grill or sauté 2–3 minutes per side, until pink and opaque.

Gina's tip

Too much time in the lemon juice can make shrimp tough — short and sweet is the rule.

Coach's Note

The rule with shrimp is short and sweet — fifteen minutes, no more, or the lemon starts to cook it before the pan does.
