Lemon Herb Shrimp Marinade

Shrimp cooks quickly and doesn't need a long marinade — just enough to catch the lemon and herbs.

Ingredients
- ¼ cup extra virgin olive oil
- Juice of 1 lemon
- 2 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon Dijon mustard
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- Pinch of red pepper flakes (optional)
Method
- Whisk together all the ingredients.
- Add the shrimp and marinate 15–30 minutes only.
- Grill or sauté 2–3 minutes per side, until pink and opaque.
Gina's tip
Too much time in the lemon juice can make shrimp tough — short and sweet is the rule.
Coach's Note
The rule with shrimp is short and sweet — fifteen minutes, no more, or the lemon starts to cook it before the pan does.
