Golden, lightly sweet granola with toasted oats, almonds and coconut. Five minutes to put together and so much better than most of what comes in a bag.

Scaled from the original recipe, sizing up or down is proportional, so taste and adjust the salt, acid & spice.

Ingredients

  • 2 cups rolled oats
  • ½ cup slivered almonds
  • ½ cup unsweetened shredded coconut
  • ¼ cup coconut oil, melted
  • ¼ cup pure maple syrup

Method

  1. Preheat oven to 350°F.
  2. Combine all ingredients in a large bowl and mix well.
  3. Spread into a thin, even layer on a baking sheet.
  4. Bake for 5 minutes, stir, then return to the oven.
  5. Continue baking and stirring every 5 minutes until golden, about 15 minutes total.
  6. Cool completely before storing. The granola will become crisp as it cools.

Serve with Greek yogurt · Fresh berries · Almond or coconut milk · Sliced banana

Gina's Tip

Double the batch and keep it in an airtight container or glass jar in the pantry. Add dried blueberries, raisins or goji berries after baking if you like.
