Why You Should Taste as You Cook

The short answer

Tasting as you go is the single habit that turns a nervous cook into a confident one. A recipe is a guide; your own mouth is the final judge of when it's right.

Recipes can't taste your food

Your tomatoes, your lemons, your salt, your stove — all a little different from the recipe writer's. Only you can tell what your dish actually needs, and only by tasting.

Taste, adjust, taste again

A pinch more salt, a squeeze of acid, a little more heat — taste after each small change. That loop is the whole secret, and it's how you stop needing recipes at all.

Gina's tip

Keep a spoon by the stove and use it constantly. Cooking well isn't about following instructions perfectly — it's about paying attention.
