Why Is My Quinoa Mushy?
Two things: too much water, and not letting it rest. Use about 1¾ cups liquid per cup of quinoa, and let it steam off the heat for five minutes before you fluff it.
Check your ratio
Quinoa needs less water than it seems. About 1 cup quinoa to 1¾–2 cups liquid. Any more and it turns to porridge.
Don't stir it
Stirring while it cooks releases starch and makes it gluey. Bring it to a boil, cover, drop to a low simmer, and leave it alone.
The rest is the secret
When the liquid is absorbed, take it off the heat and let it sit, covered, for five minutes. Then fluff with a fork. That rest is the difference between light and wet.
Rinse first
A quick rinse washes off the bitter natural coating. That's about flavor rather than texture — but do it anyway.
If it's already gone wet on you, spread it on a sheet pan for a few minutes. The extra moisture evaporates and you can usually rescue it.
