Why Doesn't My Soup Taste Good?

The short answer

A flat soup is almost always under-seasoned and missing acid. Salt it in layers as it cooks, build it on sautéed onion and garlic, and brighten it at the end with lemon or vinegar.

Season as you go

Salt added only at the end sits on top. Salt in stages, tasting as you build, and the flavor develops all the way through.

Start with a base

Sauté onion and garlic before anything else. That little bit of browning is the foundation the whole soup stands on.

Finish with acid

This is the trick almost nobody uses. A squeeze of lemon or a splash of vinegar right at the end lifts a dull soup instantly — it wakes everything up.
