Why Are My Vegetables Mushy?
The short answer
They're overcooked, usually in too much water. Cook vegetables quickly, stop while they're still bright and a little firm, and remember they keep cooking after you pull them.
Crisp-tender is the target
Most vegetables go from perfect to mush in about a minute. Aim for crisp-tender — cooked through but with a little bite left — and take them off a touch early.
Skip the big pot of boiling water
Boiling waterlogs and softens. Steaming, sautéing and roasting all give you far more control and keep the texture and color.
Cold water stops the cooking
If you're blanching greens or green beans ahead, plunge them into ice water the moment they're bright. It stops them cold and locks in the snap.

Residual heat is real — a pan of vegetables keeps softening after it leaves the stove. Pull them just before they look done.
