Lovely warm first thing, or cold all day. No sugar, no sweetener — just flavor drawn slowly out of filtered water.

For a pitcher

1 lemon, sliced, plus 1–2 tsp raw honey stirred in, to a pitcher of filtered water.

The method

  1. Melt the raw honey in a splash of warm water first — it won’t dissolve in cold water — then stir it in with the lemon.
  2. Add the fruit, herbs or citrus to a pitcher of filtered water. Press or clap herbs between your palms first to wake up their oils.
  3. Chill at least 1–2 hours — or overnight — so the flavors bloom.
  4. Sip through the day, topping up the water once or twice before the fruit tires out.

Make it an electrolyte water

A pinch of good sea salt and a squeeze of citrus turns this into a gentle electrolyte water — kind on a hot day or after a workout. For a fuller version, see Gina’s Natural Electrolyte Lemonade.

Keeps: about 2 days cold. Pull the citrus or cucumber peel after a day so it doesn’t turn bitter.
