Smoked Salmon & Avocado Toast

This is one of those breakfasts that feels a little special without requiring much effort. I often make it on slower mornings when I have time to sit with a cup of coffee and actually enjoy the start of the day. Sometimes the simplest meals become the ones you remember most.
Scaled from the original recipe, sizing up or down is proportional, so taste and adjust the salt, acid & spice.
Ingredients
- 2 slices whole-grain sourdough bread
- ½ ripe avocado
- 4 ounces smoked salmon
- Thinly sliced cucumber
- Fresh dill
- Lemon wedges
- Freshly cracked black pepper
Method
- Toast the bread until golden.
- Mash the avocado and spread evenly over each slice.
- Top with smoked salmon and cucumber.
- Finish with fresh dill, black pepper, and a squeeze of lemon.
