Tahini

In one line

Sesame in a jar — the nutty, creamy secret behind hummus and the best dressings.

Why I love it

It makes hummus silky, turns into a lemony dressing that's good on everything, and drizzles over roasted vegetables like a savory sauce. A jar lasts and earns its shelf space.

Buying it

Look for tahini made from hulled sesame, smooth and pourable, ideally single-origin (Lebanese and Palestinian brands are wonderful). It should taste nutty, not bitter.

Storing it

The pantry is fine; the fridge extends its life but stiffens it. The oil separates — that's normal.

Using it

Blend into hummus or a lemon-tahini dressing, drizzle over roasted vegetables or falafel, or whisk with lemon and water for a quick sauce.
