How Long Does Homemade Hummus Last?
About four to five days in the refrigerator, kept in a sealed container. A thin layer of olive oil over the top helps it keep, and it freezes well for up to a few months.
Storing it
Keep homemade hummus in an airtight container in the fridge. Smoothing the top and pouring a thin film of olive oil over it seals out air and keeps the surface from drying and darkening.
Freezing
Hummus freezes surprisingly well — up to about three months. Thaw it in the fridge overnight and give it a good stir, with a splash of water or lemon to bring the texture back.
When to let it go
If it smells sour, tastes off, or shows any spots of mold, it's done. Without preservatives, homemade won't last like the tub from the store — that's the trade for real ingredients.
Make a smaller batch more often. Hummus is at its best in the first few days, so there's no prize for a giant bowl of it.
