Few topics online cause as much panic as seed oils. Here’s the calm version: the issue isn’t a drop of oil in your pan — it’s the sheer volume hidden in ultra-processed and restaurant food.
What seed oils are
Seed oils — soybean, corn, canola, sunflower, and the like — are extracted from seeds, usually through heavy industrial processing. That processing, and how much we eat, are the real conversation.
Why they’re controversial
They’re high in omega-6 fats, which we need in small amounts but tend to get in overwhelming excess — largely because they’re in almost every packaged and fried food.
Where the real load comes from
It’s not your home cooking. It’s the ultra-processed snacks, the fast food, the restaurant fryer. Cook more at home and the number drops on its own.
The Mediterranean perspective
This is why I lean on olive oil, and a little butter or avocado oil where it suits. Whole-food fats, used simply, sidestep most of the debate entirely.
