There’s no calorie counting, no forbidden list, no phase you finish. It’s simply a way of eating built on real food, mostly from plants — and once it becomes how you cook, you never have to think about it again.
What’s on the plate
Vegetables and fruit in abundance. Beans, lentils, and whole grains. Good olive oil as the everyday fat. Fish and seafood often, poultry and eggs sometimes, red meat now and then. Herbs, garlic, lemon. A little cheese and yogurt. Wine, if you like it, with a meal and in moderation.
Why it works
This pattern is tied to a longer, healthier life — better heart health, steadier blood sugar, less inflammation. But the real reason it lasts is simpler: it’s food you actually want to eat, for the rest of your life.

How to start
You don’t overhaul anything. Cook with olive oil instead of butter. Add a vegetable to every plate. Keep beans on the shelf. Eat fish this week. Sit down to dinner. Each small swap moves you there.
