Fresh Lemon vs. Bottled Lemon Juice

The short answer

Fresh lemon tastes bright and alive. Bottled juice is flat and often a little bitter from the preservatives. Whenever the lemon flavor is meant to shine, use fresh — it's a genuinely different ingredient.

You can taste the difference

In a dressing, over fish, in a soup at the end — anywhere lemon is doing real work, fresh is unmistakably brighter and cleaner. Bottled reads as sour without the perfume.

Get the most from each lemon

Zest it before you juice it — that fragrant zest is flavor most people throw away. One lemon gives you a few tablespoons of juice and a whole lot of aroma.

Gina's tip

A single fresh lemon transforms a dish in a way a bottle never quite matches. It's worth keeping a few on the counter at all times.
