Warm Brie with Honey, Figs & Walnuts

This is indulgence done the way I like it — a small piece, savored, with the fruit doing the heavy lifting. Just a wedge of brie warmed until just soft, a ribbon of raw honey (or a spoonful of the orange marmalade from our fruit spreads), figs and walnuts on top, and lots of fresh fruit all around. Yes, it's a little indulgent — but in small doses, that's good for the soul. Quality over quantity: a little goes a long way.

Ingredients

  • A small wedge of brie — about a quarter of a little wheel (or a small wheel, to share)
  • 1 to 2 tablespoons raw honey, or a spoonful of orange marmalade
  • 2 to 3 fresh figs (or dried), halved
  • A small handful of walnuts
  • A few sprigs of fresh thyme
  • To serve: plenty of fresh fruit — grapes, thin apple or pear slices, berries — and crackers or toasted sourdough

Method

  1. Heat the oven to 350°F.
  2. Set the brie in a small baking dish or on a piece of parchment. Bake 8 to 12 minutes, until soft to the touch but not collapsed — a wedge warms faster than a whole wheel.
  3. Transfer to a board or plate. Drizzle with just a little honey, or dot with orange marmalade — a ribbon, not a puddle.
  4. Scatter the figs, walnuts and thyme over the top.
  5. Surround it generously with fresh fruit and set out the bread. Serve warm, and let a small piece be enough.

Gina's tip

The fruit is the generous part; the brie and honey are the accent you savor. Raw, local honey is the upgrade — a real food with trace minerals — or use a spoon of your own orange marmalade for a lower-sugar swirl. Don't over-bake, or the brie turns to liquid.
