Sheet Pan Suppers

One pan. One dinner. Almost no dishes.

Protein and vegetables, tossed with good olive oil and seasoning, roasted together on one pan — the whole dinner, hands-off, in about forty minutes. Think of it like a board, but hot: wonderful for a family, and just as good if it's only you (one pan is easily two days of easy eating). Once you see the formula, you'll stop needing the recipe.

The method, once and for all

Heat the oven to 425°F and line a sheet pan with parchment. Toss the vegetables with olive oil, salt and pepper and spread them out — don't crowd the pan, or they'll steam instead of roast. Add the protein (nestled among the veg, or given its own space). The one rule: stagger by cook time — dense vegetables and thick proteins go in first; quick things like shrimp, asparagus and cherry tomatoes join partway so nothing overcooks. Everything's done when the protein hits temperature: 165°F for chicken, just-opaque for fish and shrimp.

Every one of these keeps and reheats beautifully — make a pan tonight and tomorrow's lunch or dinner is already handled, whether you're feeding a family or just yourself for two days. To stretch it into a fuller meal, pile a scoop of warm brown rice, farro or quinoa right in the center of the pan and let it warm through. Roast once, eat it two ways.

Make it your own

That's the whole chapter, really: pick a protein, two or three vegetables, a seasoning or a marinade, and roast. After a couple of these you won't need the list — you'll open the fridge, see what's there, and build your own. That's the goal: not more recipes, but a confident cook. Or make it a few hours ahead and simply reheat — a lovely rhythm of early dinners warmed up after a long day, with a little fruit salad and a cup of tea later on.
