Warm-spiced butternut squash and apple, roasted and threaded onto skewers — an easy holiday treat that works as an appetizer, dessert, or snack.

This is an impressive, easy-to-prepare treat that works as an appetizer, dessert, or snack. Butternut apple skewers tend to disappear quickly, but any leftovers keep in the fridge for 3 days.

Warning: if you serve these at your holiday party, expect to share the recipe.

Preheat the oven to 375 degrees. Peel, then dice the butternut squash into 1-inch cubes. Mix together the spices, ghee or oil, nut butter, lemon juice, and maple syrup. The consistency should resemble a thick dressing; add a little water to thin it if necessary.

In a bowl, pour two-thirds of the mixture over the squash and toss so the pieces are evenly covered. Place the squash on a baking sheet and bake for 20 minutes. Mix the apple into the remaining sauce. Remove the squash from the oven and let it cool for several minutes.

Alternate apple and squash pieces on the skewers. Return the skewers to the oven and bake for 15 minutes, or until the squash and apples are soft. Enjoy!

Tips

Soak the wooden skewers in water for about 30 minutes before use.
